. Cook the rice according to the package instructions.

. In a medium skillet, add a drizzle of olive oil and the chicken.

. Add the Mexican spices to the chicken and sauté for 4 minutes on each side over medium heat.

. Towards the end of cooking, add a splash of water (about 2 tablespoons per person) and let the sauce thicken for 2 minutes.

. Once the rice is cooked, drain it and serve it in plates.

. Add the chicken, drained corn and drained red beans, diced avocado, and a drizzle of sauce.

. Season to taste and add a few cilantro leaves if you have them. It's ready!
