Instructions

  • 1.   Cook the rice according to the package instructions.
  • 2.   In a medium skillet, add a drizzle of olive oil and the chicken.
  • 3.   Add the Mexican spices to the chicken and sauté for 4 minutes on each side over medium heat.
  • 4.   Towards the end of cooking, add a splash of water (about 2 tablespoons per person) and let the sauce thicken for 2 minutes.
  • 5.   Once the rice is cooked, drain it and serve it in plates.
  • 6.   Add the chicken, drained corn and drained red beans, diced avocado, and a drizzle of sauce.
  • 7.   Season to taste and add a few cilantro leaves if you have them. It's ready!
