Instructions

  • 1.   Start this homemade oriental couscous salad recipe by pouring the couscous into a large bowl. Add salt, the same volume of boiling water, and let it swell for 15 minutes. Then separate the grains with a fork.
  • 2.   Wash and remove the seeds from the tomatoes, cut them into very small cubes. Peel, deseed, and dice the cucumber. Peel and slice the onions. Squeeze the lemon juice. Wash, separate the leaves, and finely chop the herbs.
  • 3.   Mix the couscous with all the vegetables. Drizzle with olive oil and lemon juice, add the mint and parsley leaves, mix. Taste and adjust the seasoning. Cover with plastic wrap and refrigerate for 1 hour before serving.

  • 3 tomatoes
  • ½ cucumbers
  • 3 small white onion
  • 1 lemon
  • 3 tablespoon of olive oil
  • 3 stalk of fresh mint
  • 3 bunch of parsley
