Instructions

  • 1.   Start this recipe for pea and broad bean salad by cooking the freekeh or bulgur as indicated on the package. Rinse it with cold water and drain.
  • 2.   Bring a pot of water to a boil, plunge the broad beans for 1 to 2 minutes in the boiling water, drain them and rinse them under cold water. Remove the thin skin of the broad beans by pinching them. Plunge the broad beans and peas again into a pot of boiling water for 6/8 minutes. Drain and let cool.
  • 3.   Mix the soy sauce with the sesame oil and rice vinegar. Add the chili flakes.
  • 4.   Finely chop the mint.
  • 5.   In a large salad bowl, put the cereals, broad beans, chickpeas, and peas. Add the mint. Pour the dressing and stir.
  • 6.   This salad can be enjoyed warm or cold.

  • 300 g of broad bean
  • 200 g of pea
  • 150 g of chickpeas (canned, drained weight)
  • 250 g of bulgur
  • 20 leaf of fresh mint
  • 3 tablespoon of soy sauce
  • 4 tablespoon of sesame oil
  • 1 teaspoon of rice vinegar
  • ½ teaspoon of chili pepper
