Scallop Cassolettes with Monsieur Cuisine

Instructions

  • 1.   Finely chop the onions, garlic, and mushrooms on a cutting board.
  • 2.   Sauté everything in butter in your Monsieur Cuisine for 5 minutes / speed 1 / 120 °C / reverse function. Set aside and wipe the bowl clean.
  • 3.   Sear the scallops in the remaining butter (about 1 minute per side) for 3 minutes / speed 1 / 110 °C / reverse function, then add the whisky. Pour everything into a heat-resistant bowl and flambé for a few seconds. No need to wipe the bowl clean.
  • 4.   Prepare the sauce: pour white wine, cream, and the cooking juice from the scallops into the bowl. Beat while heating and add flour to thicken the mixture for 6 minutes / speed 4 / 95 °C.
  • 5.   Return the scallops, mushrooms, garlic, and onions to the bowl. Add the shrimp, season, and start cooking for 20 minutes / speed 1 / 85 °C / reverse function.
  • 6.   Divide the mixture into cassolettes or ramekins, and sprinkle with chopped parsley.
