Instructions

  • 1.   Heat 2 tablespoons of olive oil in a pan. Finely chop the onions and sauté them in the oil until golden brown.
  • 2.   Meanwhile, peel and grate the carrots. Add them to the pan and mix. Cook for about 10 minutes, adding water regularly (not oil!).
  • 3.   Cut the zucchini into large dice and add it to the mixture. Cook over medium heat until the zucchini is tender, stirring well. Add water to prevent the vegetables from sticking.
  • 4.   Adjust the seasoning, add spices if desired.
