Eggplant gratin.

Instructions

  • 1.   Preheat the oven to 180°C (350°F).
  • 2.   Wash and slice the eggplants vertically.
  • 3.   Cut the mozzarella into slices.
  • 4.   Alternate layers of tomatoes, mozzarella, and eggplants in a gratin dish.
  • 5.   Season with salt and pepper, sprinkle with Parmesan cheese, and drizzle with olive oil.
  • 6.   Bake for 1 hour.
    And serve with a fresh green salad.
