Asparagus Flan

Instructions

  • 1.   Preheat the oven to 180°C (350°F).
  • 2.   Drain the asparagus well and squeeze out all the water.
  • 3.   In a blender (it's essential, otherwise the asparagus fibers won't be reduced), combine the asparagus, whole eggs, heavy cream, salt, and pepper. Blend for 30 seconds until smooth and creamy.
  • 4.   Grease a loaf pan and lightly dust it with flour. Pour the mixture into the pan.
  • 5.   Place the pan in a water bath and bake for about 40 minutes.
  • 6.   Serve cold with a sauce made with whipping cream, a squeeze of lemon, and herbs.
