Msemen {flaky pancakes}

Instructions

  • 1.   Dissolve the dry yeast in a little warm (not hot) water and let it foam.
  • 2.   In a bowl, mix the flour, semolina, and salt.
  • 3.   Gradually add the yeast and warm water (if you have a stand mixer, it's preferable, otherwise roll up your sleeves and knead until you obtain a homogeneous, smooth, and non-sticky dough).
  • 4.   Shape small balls (the size of a mandarin) while oiling the dough with the previously prepared oil-butter mixture.
  • 5.   Take a ball and flatten it on an oiled work surface. Start by rolling it out as thinly as possible, oiling your fingers. Fold the two sides and sprinkle with fine semolina. Oil your fingers and fold the sides to form a square. Sprinkle with semolina.
  • 6.   Do the same for the rest of the balls.
  • 7.   Heat a pan and cook the Msemen on both sides.
  • 8.   Serve by drizzling with honey.

  • 450 g of flour
  • 225 g of fine wheat semolina
  • 1 bag of baking powder
  • 1 teaspoon of salt
  • ½ liter of warm water
  • 150 ml of melted butter
  • 50 ml of oil
