Instructions

  • 1.   Preheat the oven to 350°F (180°C).
  • 2.   Roll out the pie crust in a tart pan.
  • 3.   Wash and dry the tomatoes, zucchini, and eggplant. Cut them into small pieces. Pour olive oil into a frying pan and sauté the vegetables for 5 minutes, stirring occasionally. Remove as much juice as possible and let the vegetables cool.
  • 4.   In a bowl, beat the eggs, then add the milk, cream, herbs, salt, and pepper. Mix well.
  • 5.   Spread the pieces of tomatoes, zucchini, and eggplant on the bottom of the pie crust. Cut the feta into small cubes and sprinkle them over the vegetables. Pour the mixture on top.
  • 6.   Bake for 20 to 25 minutes.

  • 1 shortcrust pastry with pure butter
  • ½ eggplants
  • 200 g of cherry tomato
  • 200 g of feta
  • 15 cl of skim milk
  • 15 cl of light cream (12-15%)
  • 3 eggs
  • 1 teaspoon of Provence herb
  • 1 tablespoon of olive oil
  • 1 zucchini
  • salt (according to taste)
  • pepper (according to taste)
