1. Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit).
2. Peel the carrots and pears and cut them into cubes.
3. In a bowl, mix the carrots and pears with honey, spices, olive oil, and spread everything in the bottom of a gratin dish. Season.
4. Place the quails on top and bake for 30 minutes.
5. Once done, collect the cooking juices and mix them with cream.
6. Heat it gently and pour the creamy sauce over the quails.
