Low Sugar and Low GI Eggplant Parmigiana

Eggplant Parmigiana in 10 minutes flat And it's low GI too. To save time, I used frozen vegetables from @picardsurgeles. I love recipes that can be made quickly.

Instructions

  • 1.   Here are the ingredients:
    - 2 packets of pre-cooked Picard eggplant slices, thawed
    - 2 large jars of tomato sauce with basil
    - Pre-cut Picard onions, sautéed in 3 tbsp of olive oil
    - 50g of Parmesan cheese
    - 80g of grated cheese, I used cheddar
    Salt and pepper
  • 2.   Layer the eggplant slices, onions, tomato sauce, and Parmesan cheese in a baking dish. Repeat for multiple layers.
    Finish with the cheddar cheese.
  • 3.   Bake for 40 minutes at 190 °C.

  • 2 bag of eggplant
  • 2 large tomato basil sauce
  • 1 bag of frozen onion
  • 3 tablespoon of olive oil
  • 50 g of grated parmesan
  • 80 g of grated cheese
  • salt (according to taste)
  • pepper (according to taste)
