Mushroom and Fourme d'Ambert Soup with 0 sugar and Low GI

The cheese comes out just right without overpowering the taste of the mushroom. I also added cauliflower but you can't really taste it.

Vegetarian Soup Low GI
Course: Starter
Preparation time: 10 minutes
Cooking time: 25 minutes

Instructions

  • 1.   The recipe:
    - 350g of button mushrooms
    - 200g of pre-cooked cauliflower from @picardsurgeles
    - 1 small onion + a little garlic
    - 80g of Fourme d'Ambert cheese
    - 10 cl of oat or almond cream if you want it #glutenfree
    - 1 tsp of cumin
    - about 50 cl of water
    - salt and pepper
  • 2.   Heat for 25 minutes, then blend and add the cream and cheese at the end.
    Sprinkle with raw mushrooms and chopped hazelnuts.

  • 350 g of mushroom
  • 200 g of cauliflower
  • 1 small onion
  • 1 garlic clove
  • 80 g of Ambert cheese
  • 10 cl of oat cream
  • 1 teaspoon of ground cumin
  • 50 cl of water
  • 4 pinch of crushed hazelnut (optional)
  • salt (according to taste)
  • pepper (according to taste)
