Low-sugar and low-GI Red Pepper Tomato Feta Soup

Quick to make and delicious. Before leaving for Spain, I made this soup to get in the mood! Note that it is a hot soup.

Vegetarian Soup Low GI
Course: Starter
Preparation time: 10 minutes
Cooking time: 30 minutes

Instructions

  • 1.   _ 3 fresh peppers or frozen peppers from Picard
    _ 1 large can of crushed tomatoes
    _ 100g of feta cheese + some crumbles for garnish
    _ thyme
    _ salt and pepper
    _ 1 tsp of turmeric
  • 2.   Cook peppers and tomatoes for 30 minutes. At the end of cooking, add feta cheese, spices, and blend.

Ingredients for servings

  • 3 red bell peppers
  • 1 large canned crushed tomatoes
  • 100 g of feta
  • 1 teaspoon of turmeric powder
  • salt (according to taste)
  • pepper (according to taste)
