Chicken and Bell Pepper Stir-Fry

Instructions

  • 1.   Slice your chicken breasts into small pieces and coat them in cornstarch.
  • 2.   Dice the red and green bell peppers, as well as the tomatoes.
  • 3.   Sauté the sliced onions and herbs de Provence in olive oil.
  • 4.   Add the sliced chicken and cook until golden.
  • 5.   Then, add the bell peppers and tomatoes.
  • 6.   Let simmer for about ten minutes on low heat. The cornstarch and vegetable juices should create a light sauce.
