Instructions

  • 1.   Brew 4 espressos. Soak the ladyfinger biscuits and place them in the bottom of the ramekins.
  • 2.   In a chilled bowl, mix the egg yolks and sugar with a hand mixer. Add the mascarpone and continue mixing with the mixer, then pour in the chilled cream.
  • 3.   Pour the cream halfway into the ramekins, then place another layer of biscuits soaked in coffee and pour the remaining cream. Chill overnight before serving.
  • 4.   Sprinkle with cocoa powder just before serving.

Notes & Suggestions

  • You can make a fruity version of tiramisu: Prepare a verbena syrup. In a saucepan, pour 25cl of water with a handful of fresh verbena. Bring to a boil, then cover, turn off the heat, and let infuse for 20 minutes. Remove the verbena leaves, add 20g of honey, bring to a boil, and stop cooking. Let it cool. Follow the classic recipe: dip the biscuits in the verbena syrup and place them at the bottom of the ramekins. Add strawberries to each ramekin and pour in the cream-based mixture.
