Instructions

  • 1.   Melt the chocolate, cut into pieces, in a double boiler in a saucepan.
  • 2.   Let it cool down off the heat.
  • 3.   Add the egg yolks and mix well.
  • 4.   Beat the egg whites with the salt until stiff peaks form using an electric mixer.
  • 5.   Gently fold them into the mixture using a spatula.
  • 6.   Pour the mousse into small ramekins.
  • 7.   Chill for a minimum of 2 hours before serving.
  • 8.   Serve with fresh strawberries, cleaned and hulled.

  • 4 egg whites
  • 3 egg yolks
  • salt (according to taste)
