. Cut the leeks into pieces and wash them.

. Melt the butter in a sauté pan.

. Add the leeks, mix, and cover.

. Cook over very low heat for about 25 minutes, stirring occasionally.

. Meanwhile, put the flour with a large pinch of salt in a bowl.

. Add the butter cut into small cubes.

. Work the mixture with your fingers until it has a "sandy" texture.

. Finally, add the Parmesan cheese.

. Brown the cod on both sides in an oiled pan. Season and crumble it.

. Place the fish crumbs at the bottom of the dish.

. Cover with the leek fondue and then the crumble.

. Bake for 15 minutes in a preheated oven at 180°C.
