Instructions

  • 1.   Cut the leeks into pieces and wash them.
  • 2.   Melt the butter in a sauté pan.
  • 3.   Add the leeks, mix, and cover.
  • 4.   Cook over very low heat for about 25 minutes, stirring occasionally.
  • 5.   Meanwhile, put the flour with a large pinch of salt in a bowl.
  • 6.   Add the butter cut into small cubes.
  • 7.   Work the mixture with your fingers until it has a "sandy" texture.
  • 8.   Finally, add the Parmesan cheese.
  • 9.   Brown the cod on both sides in an oiled pan. Season and crumble it.
  • 10.   Place the fish crumbs at the bottom of the dish.
  • 11.   Cover with the leek fondue and then the crumble.
  • 12.   Bake for 15 minutes in a preheated oven at 180°C.
