Vegan Irish Stew

Instructions

  • 1.   Peel and cut the potatoes into medium-sized cubes.
    Peel and slice the carrots into rounds.
    Slice the onions and garlic.
  • 2.   In a wok, sauté the vegetables in 1 tablespoon of olive oil for a few minutes; once the vegetables are lightly browned, set them aside;
  • 3.   In the wok, sweat the onion with a little olive oil, then add the garlic and sauté for 1 minute
  • 4.   Add the flour, mix it to coat the pieces of onion and garlic, and let the vegetables lightly brown
  • 5.   Add the broth and dark beer, stir and scrape the bottom of the wok to release any flour that may have stuck
  • 6.   Add the previously sautéed vegetables, tomato paste, herbs, salt, and pepper, and stir
  • 7.   Cover and simmer over medium-low heat for 15 to 20 minutes, stirring often to release the sauce that will thicken at the bottom of the wok (the sauce will have a very sticky texture)
  • 8.   Taste a piece of potato to check for doneness: the vegetables should remain firm, but cooked... without turning into mush.

  • 600 ml of vegetable bouillon cube
  • 6 tablespoon of flour
  • 33 cl of telenn Du (dark beer)
  • 9 tablespoon of tomato paste
  • 3 leaf of bay leaf
  • pepper (according to taste)
  • parsley (according to taste)
