Light Vegetable Fritters

Instructions

  • 1.   Pour the flour into a bowl, add the yeast, salt, pepper, sweet paprika or other spices, and the two eggs. Begin to mix and pour in the beer: the batter should be "creamy" but not too liquid.
  • 2.   Let it rest for 5 minutes.
  • 3.   Meanwhile, cut the vegetables into small cubes or thin slices, add them to the batter and mix.
  • 4.   Using a tablespoon, pour a little bit of the mixture into the hot oil. The fritters will quickly puff up and cook in 3 to 4 minutes.
  • 5.   Drain on paper towels.
  • 6.   Serve hot, plain, or with a small spicy tomato sauce, for example.
