Sweet Potato Blinis

Instructions

  • 1.   INSTRUCTIONS:

    - ⚠️♨️ Cook the sweet potatoes in salted boiling water for 30 minutes.
    - ⚠️🔪 Peel them and mash them with a potato ricer (fine grid).
    - Stir in the flour and 2 whole eggs, stirring well.
    - Season with salt and pepper to taste and mix again.
    - Add the yogurt and milk, mix well.
    - Beat the egg white until stiff peaks form, then fold it into the batter.
    - ⚠️♨️ Heat a little butter in a blini pan.
    - ⚠️♨️ Drop a tablespoon of batter onto the pan.
    - ⚠️♨️ Cook for 3 minutes on each side until golden brown.
    - ⚠️♨️ Repeat, buttering the pan between each blini.
    - Keep the cooked blinis warm in the oven.
    - Whip the cold cream until stiff peaks form, season with salt and pepper to taste.
  • 2.   SERVING & TASTING:

    - Place one blini on each plate and top with whipped cream.
    - 🍽️ Enjoy warm.
    - 💡 Can be served with gravlax salmon.
    - 🍷 Pair with Alsace Tokay-Pinot-Gris wine.

Notes & Suggestions

  • - Choose sweet potatoes with orange flesh if possible.
    - Chill the cream in the refrigerator beforehand.

  • 15 cl of milk
  • 20 cl of heavy cream
  • 100 g of butter
