Instructions

  • 1.   Preheat the oven to 220°C (gas mark 3, fan-assisted: 200°C).
  • 2.   Bring water and salt to a boil. Cut the leeks into 10 cm long pieces. Cook them covered over low heat for 10 to 15 minutes. Remove the leeks (reserve the cooking liquid) and let them drain. Wrap each piece of leek with a slice of ham and arrange them in a gratin dish.
  • 3.   Heat the butter and make a roux with the flour, stirring constantly. Pour in 250 ml of the cooking liquid. Bring to a boil while stirring and let simmer for about 10 minutes. Season to taste. Pour the sauce over the leek rolls. Sprinkle with cheese. Bake in the preheated oven for about 10 to 15 minutes, on the upper rack.
