. Cut everything into small, finely chopped pieces.

. Make a mayonnaise, replacing the vinegar with a squeeze of lime.

. Mix it with the salad.

. Line 4 ramekins with a slice of smoked salmon (or trout), lightly oiled with olive oil.

. Fill with the Piémontaise mixture.

. Refrigerate for a few hours.

. Unmold before serving.
