Instructions

  • 1.   Cut everything into small, finely chopped pieces.
  • 2.   Make a mayonnaise, replacing the vinegar with a squeeze of lime.
  • 3.   Mix it with the salad.
  • 4.   Line 4 ramekins with a slice of smoked salmon (or trout), lightly oiled with olive oil.
  • 5.   Fill with the Piémontaise mixture.
  • 6.   Refrigerate for a few hours.
  • 7.   Unmold before serving.
