Roasted Cod with an Incredible Herb Sauce

This dish takes on its full meaning thanks to its incredible herb sauce. It is both simple and sophisticated, exotic with the soy sauce, coriander, and mint, and Mediterranean with the olive oil, lemon, and tomato.

Instructions

  • 1.   Prepare the sauce a little in advance to allow the different flavors to blend: olive oil, lemon juice, soy sauce, minced onion, peeled and seeded tomato cut into small pieces.
  • 2.   Preheat the oven to 180 °C (350 °F).
  • 3.   Wash the cod fillets, pat them dry carefully, and arrange them in an oven-safe dish.
  • 4.   Season with salt and pepper.
  • 5.   Bake for 15 minutes, no longer, so that the fish holds its shape.
  • 6.   Just before serving, add the roughly chopped herbs to the sauce and mix gently.

  • 1 pinch of ground coriander
