1. Sauté the ground meat in a hot pan with a little oil to give it a nice color.
2. Add garlic, salt, and cumin, and let it cook well.
3. Fry the potato cubes in hot oil and drain on paper towels. Season with salt at the end of cooking.
4. Crack the eggs into a large bowl and whisk them a little.
5. Add the cheeses, a little salt, and black pepper.
6. Then add the fried potato cubes.
7. Put a little oil in a thick-bottomed pan, about 22cm in diameter, let it heat well, then reduce the heat.
8. Pour half of the egg and fries mixture into the pan.
9. Top with the ground meat, then cover with the second layer of egg and fries.
10. Cook on low heat until well done. When the first side is cooked, flip it to cook on the other side.
