Spinach Flans with Tomato Hearts (Low Glycemic Index - BP)

Instructions

  • 1.   Remove the stems and rinse the spinach, then melt them in a sauté pan with 20 g of butter. Set aside.
  • 2.   Preheat the oven to 180°C (350°F). In a bowl, whisk the egg with the ricotta and pesto. Season with salt and pepper, add the spinach and mix well.
  • 3.   Pour the mixture into buttered ramekins and insert a tomato in the middle, then bake for about 30 minutes. Unmold and serve hot or cold.
