Lentil and Spinach Dahl (Low GI - Vegan)

Instructions

  • 1.   Cook the lentils in water in a saucepan for 25 minutes.
    Cook the spinach.
  • 2.   In a bowl, mix together the cooked lentils, spinach, minced garlic, crushed tomatoes, and spices. Season with salt and pepper.
    Add the coconut cream.
  • 3.   Heat everything together.
    Sprinkle with chopped coriander and serve.

Ingredients for servings

  • 270 g of dry green lentil
  • 200 g of fresh spinach
  • 1 canned crushed tomatoes
  • 1 garlic clove
  • 3 teaspoon of ground cumin
  • 2 teaspoon of ground coriander
  • 10 cl of coconut cream
  • 4 sprig of fresh coriander (optional)
