Potato Pancakes

Instructions

  • 1.   Peel and wash the potatoes. Grate them using a fine grater. Squeeze them to remove excess water.
  • 2.   Peel and crush the garlic. Wash and chop the parsley. Mix the thyme, two-thirds of the parsley, garlic, salt, and pepper into the potatoes.
  • 3.   Divide the mixture into eight equal parts and shape them into eight patties.
  • 4.   Heat the oil and cook the patties. Let them brown for 5 minutes over high heat. Flip them over and brown for another 5 minutes. Reduce the heat and let them cook for an additional 3 minutes.
  • 5.   Sprinkle with the remaining parsley and serve hot with a green salad or as a side dish.
