  • 1.   Grate the cheese. Melt the butter, mix in the flour and stir over the heat with a wooden spoon for a few minutes without letting it color. Add the lukewarm milk, dilute well and return to low heat without stopping mixing until the mixture thickens. Put the cheese. Season the béchamel with salt and pepper (not too much because the cheese will enhance the taste).
  • 2.   Remove from the fire, wait a few moments. Incorporate an egg yolk, beating vigorously, then a second and a third, always working the dough vigorously after each addition. (Note that only 3 yolks are used).
  • 3.   Butter a soufflé mold well up to the edge (be careful not to touch the inside of the mold after this operation).
  • 4.   Beat the 4 whites until stiff. Incorporate 2 tablespoons into the béchamel, stirring well then incorporate the rest delicately, lifting the dough well with the spatula. If there are still traces of white snow, it does not matter, it will allow the soufflé to rise.
  • 5.   Pour into the mold, which should only be half-filled. Bring to a low oven (thermostat 4 to 5, i.e. 180 ° C), then increase the heat a little. Do not open the oven for the first 1/4 hour. Serve as soon as the soufflé is cooked (allow 20 to 30 minutes). Can be served with a salad.
