Asian-style Scrambled Eggs

Instructions

  • 1.   Lightly beat the eggs in a bowl, adding the powdered broth, coriander, salt, and pepper. Set aside. Peel and slice the fresh onions and garlic. Heat the sesame oil in a medium heat pan. Add the onions and sauté for a few minutes.
  • 2.   Roughly chop the spinach and add it to the pan. Let it wilt for 2 minutes, stirring with a wooden spoon.
  • 3.   Pour the beaten eggs over the mixture, while stirring with the spoon. Let the omelette cook without touching it, until the edges are golden and crispy. Flip the omelette and cook for another minute. Serve immediately.

Notes & Suggestions

  • Why not? Enjoy by drizzling with a splash of soy sauce.
