Surimi (or Tuna) Crudité Salad

Instructions

  • 1.   Peel the cucumber and cut it into small cubes. Also cut the tomatoes into cubes. Add the corn (previously drained).
  • 2.   Cut the surimi sticks lengthwise into quarters, then cut them into small cubes widthwise (which is equivalent to making crab crumbs).
  • 3.   If using tuna instead of surimi, drain it and flake it with a fork. Add all these ingredients to the salad bowl.
  • 4.   Peel and cut the avocado into cubes. Sprinkle it with lemon juice to prevent it from browning. Add it to the salad.
  • 5.   You can also add pitted black or green olives and chopped lettuce at the end (they mix better with the raw vegetables).
  • 6.   This salad is best served chilled and accompanied by a walnut oil and curry vinaigrette (which complements the vegetables well).
