Instructions

  • 1.   1. Melt the broken pieces of chocolate either in a double boiler or in the microwave (medium power). Smooth it out. Separate the egg yolks from the egg whites. Whisk the yolks in a bowl while gradually incorporating the melted chocolate.
  • 2.   2. Beat the egg whites until stiff peaks form with a pinch of salt. Mix 2 tablespoons of beaten egg whites with the chocolate mixture, stirring vigorously to soften it, then gently fold in the remaining egg whites.
  • 3.   3. Pour the mousse into bowls or glasses. Refrigerate for a minimum of 2 hours. Serve chilled.
