Chickpea Salad with Goat Cheese and Arugula | 9V 5B WW

Perfect main dish for vegetarians and divine accompaniment for barbecue lovers.

Instructions

  • 1.   Preheat the grill. Spray a little oil on the zucchini slices and grill them for 2-3 minutes on each side until they are brown and tender. Let them cool.
  • 2.   Mix the chickpeas, tomatoes, zucchini, arugula, orange zest and juice, and sesame oil. Place in plates and top with crumbled goat cheese. Season with pepper and serve.

Ingredients for servings

  • 1 teaspoon of olive oil
  • 2 zucchinis
  • 400 g of chickpeas (canned, drained weight)
  • 4 dried tomatoes
  • 1 orange
  • 2 tablespoon of sesame oil
  • 1 arugula
  • 100 g of goat cheese log
  • 1 pinch of pepper
