Instructions
1. Heat olive oil and ghee in a pan. Add cumin and caraway seeds and cook for 30 seconds. Add the diced onion. Add finely chopped ginger and red chili paste.
2. Add the diced potatoes and tomatoes and let them brown while stirring with a wooden spoon. Add chili powder, turmeric, garam masala, black pepper, salt, and mix.
3. Simmer for 20-30 minutes, until the potatoes are cooked. At the end of cooking, add freshly chopped coriander. Optionally, drizzle with a squeeze of lemon juice.
