1. Pour the milk and butter into the bowl of your Companion, then warm up with the kneading blade for 10 min / 40 °C / speed 2.
2. Add the egg yolk and beat with the kneading blade for 1 min / 0 °C / speed 4.
3. In a bowl, mix the flour, yeast, 50 g of sugar, salt, then pour into the bowl. Start kneading with the kneading blade for 8 min / 30 °C / speed 2.
4. Place the dough on a baking paper sheet, in the steam basket. Install everything in the bowl and heat up for 30 min / 30 °C / speed 0 / without water. Then let it rise outside the bowl for 1 hour.
5. Divide the dough into 12 small portions. Shape them into balls or buns. Place them on a baking sheet lined with parchment paper. Cover with a cloth and let them rise for 40 minutes, near the oven.
6. Preheat the oven to 180 °C (350 °F, gas mark 6). Meanwhile, mix 5 g of sugar with 1 tablespoon of milk. Lightly moisten the buns with this mixture. Bake for 15 to 18 minutes.
