Coconut and chia pudding

If you are new to chia seeds, give this coconut milk pudding recipe a try and you will be in for a treat.

Instructions

  • 1.   The day before, mix the coconut milk, cinnamon, honey and chia seeds, in a salad bowl, and place in the fridge (the mixture will swell)
  • 2.   Fill the verrines 3/4 full with the mixture, then add a spoonful of coconut yogurt and a few shavings of fresh or dried coconut to each.

Notes

  • It is quite possible to replace the milk and yogurt with another vegetable milk, and the coconut shavings with other pieces of fresh or dried fruit 😜

  • 500 ml of coconut milk
  • 50 ml of honey
  • 50 g of coconut
  • 70 g of chia seed
  • 1 pinch of cinnamon powder (optional)
  • 1 coconut vegetable yogurt
