1. Clean and wash the beans.
Peel and wash the potatoes and onions.
2. Slice the onions. Cut the potatoes lengthwise and then into halves or more.
3. Heat two pots of salted boiling water.
4. In the first pot, immerse the beans and cook for 20 minutes.
In the second pot, put the potatoes and let them cook for 20 minutes.
5. Remove the rind from the bacon and cut it into lardons.
Heat a frying pan and brown the lardons. Remove them with a slotted spoon. Then brown the onions in the same pan.
6. Drain the beans and potatoes.
Dry the potatoes for 1 minute.
7. In a salad bowl, place the beans, potatoes, lardons, and onions. Keep warm.
8. Dissolve the flour in the vinegar and water.
Pour this mixture into the frying pan. Heat for 2 to 3 minutes. Season with salt and pepper.
