Vanilla Flan / Vegan and Crustless

A very practical flan recipe that is ultra economical and identical to the original (except for the sweet crust that I don't add, but if you feel like it, you can prepare a slightly sweet shortcrust pastry, spread it underneath before pouring the mixture, and bake it all together). You can adapt it to the flavors you like: The traditional vanilla flavor, of course (but not always the most economical flavor considering the cost of good vanilla), but also coconut-lime (by replacing 40 cl of milk with a can of coconut milk and the zest and juice of 2 limes), carob, orange blossom, diced pears, cinnamon... in short, as often here, it's a very good base and you can customize it! Instructions

  • 1.   Bring half of the milk to a boil.
  • 2.   Mix the dry ingredients and then the remaining milk with the oil.
  • 3.   Whisk to homogenize.
  • 4.   Pour into the milk and whisk for about 3 minutes (cornstarch) or 4/5 minutes (flour).

  • 5.   pour into individual molds for 15 minutes (or 25 minutes) in a steamer (to be tested).

    Pour into a round mold and bake in a preheated oven at 220 degrees Celsius for 25 minutes.
  • 6.   Let it cool slightly, then completely chill in the refrigerator before serving.

  • 120 g of coconut sugar
  • 1 teaspoon of vanilla extract
  • 50 g of olive oil
