Instructions
1. Peel the sweet potatoes, wash them and cut them into 0.5 cm slices and pre-steam them for 5 minutes.
2. In a bowl, whisk the eggs and yolk, add the cream, cornstarch, spices, a little salt and whisk.
3. Butter or oil a gratin dish. Divide the sweet potato slices in the dish, cover them with the egg mixture and sprinkle with the Parmesan. Bake for about 35 minutes, until the gratin is golden brown.
