Sweet Potato Gratin with Spices

Sweet potatoes are great for gratins. It's a nice change, isn't it?

Instructions

  • 1.   Peel the sweet potatoes, wash them, and cut them into 0.5 cm slices. Steam them for 5 minutes.
  • 2.   In a bowl, whisk the eggs and the yolk. Add the cream, cornstarch, spices, a little salt, and whisk.
  • 3.   Grease a gratin dish with butter or oil. Arrange the sweet potato slices in the dish, cover them with the egg mixture, and sprinkle with Parmesan cheese. Bake for about 35 minutes, until the gratin is golden brown.

  • Possible spices: cinnamon, cumin, nutmeg

  • 2 eggs
  • 35 g of grated parmesan
  • 1 egg yolk
  • 4 tablespoon of Cornstarch
  • 2 teaspoon of curry powder
  • salt (according to taste)
