Mini quinoa patties in 10 minutes for busy moms, sugar-free and low glycemic index

Approved by kids I had some leftover quinoa and not much time to cook.

Instructions

  • 1.   I mixed:
    - 200g of quinoa
    - 120g of mashed white beans
    - 1 whole egg + 1 yolk
    - a little bit of gruyère or parmesan or goat cheese
  • 2.   Cook in a pan for 5 minutes.
    I also had some leftover ratatouille with chickpeas, so it was perfect as a side dish.

  • 120 g of canned white beans (drained weight)
  • 1 egg
  • 1 egg yolk
  • 1 handful of grated Gruyère cheese
  • salt (according to taste)
  • pepper (according to taste)
