Caramelized Pork Belly (Vietnamese)

Instructions

  • 1.   Heat granulated sugar over medium heat in a saucepan.
  • 2.   When the caramel is very dark, add the diced pork belly and let it brown over high heat.
  • 3.   Generously cover with cold water; add fish sauce, a pinch of MSG, and eggs.
  • 4.   Simmer gently for about 1 hour and 30 minutes without a lid, skimming as necessary at the beginning.
  • 5.   Serve with fragrant rice and green vegetables.
