Instructions

  • 1.   Cut your chicken into pieces. Put a casserole with olive oil to heat over moderate heat. Add the chicken to the skin side. Meanwhile, boil a pan of water. Dip the tomatoes for 1 minute.
  • 2.   Take them out and put them in cold water. You can now peel them very easily. Cut the onion into small pieces.
  • 3.   Remove the chicken pieces from the casserole. Add the chopped onion. Add the 4 crushed cloves of garlic. Cut the tomatoes into small pieces and put them in the casserole. Cook for 5 minutes then pour the white wine (or broth).
  • 4.   Give them chicken pieces. Cook with the lid for about 20 minutes.
  • 5.   Prepare the peppers. Cut into pieces or strips. Remove the chicken (yes I know, put it on, remove it and put it back ...!).
  • 6.   Let reduce the juice. It can take 10 minutes. Put this peppers this time. Season with salt and pepper and add a little Espelette pepper. Close the lid and cook for 20 minutes.
  • 7.   When the peppers are almost cooked and the sauce is not too liquid (nappa), put one last time the chicken with the juice he has made and continue cooking for about ten minutes. Taste to correct the seasoning and serve with rice.
