QUICK AND DELICIOUS HUNTER'S RABBIT

Instructions

  • 1.   In a large pot, brown the rabbit with the butter for a few minutes. Set aside on a plate without rinsing the pot.
  • 2.   Peel and slice the shallots, cut the mushrooms in half, and add everything to the pot. Add the bacon and sauté for five minutes over medium heat.
  • 3.   Place the rabbit back in the pot, pour in the wine, olives, and tomato paste. Add the thyme, season, close the pot, and cook over low heat for forty minutes.
  • 4.   Serve hot with white rice or fresh pasta.
