1. Cut the meat into pieces. Peel and cut the potatoes in half. Take the zest from the oranges, then cut them into thick slices.
2. Pour the oil, onions, and turkey into a tajine dish. Sauté over medium heat until browned.
3. Add the orange slices, lemons cut in half, zest, whole garlic cloves. The spices and the concentrate. Pour enough water to cover everything, place the lid on the dish, and let it simmer over medium heat for 45 minutes.
