Instructions

  • 1.   Make a ribbon with the egg yolks, sugar and vanilla sugar.
  • 2.   Add the mascarpone.
  • 3.   Beat the egg whites until smooth and gently add to the mixture.
  • 4.   To assemble the cake: soak, as and when, the speculoos in the coffee (be careful not to "soak" them).
  • 5.   In a dish, put a layer of biscuits, then a layer of mascarpone cream. Then another layer of cookies, and finish with a layer of cream.
  • 6.   Sprinkle with cocoa, cover with plastic wrap and refrigerate for a few hours.
