Instructions

  • 1.   Preheat the oven to the broil setting (at 210 °C/410 °F). Cook the crozets in a pot of salted boiling water as indicated on the package. Drain them and rinse them under cold water. Set aside.
  • 2.   Clean the leeks and thinly slice them. Peel and finely chop the onion. Blanch the leeks for 6 minutes in the salted boiling water used for the crozets. Drain them well.
  • 3.   Sauté the onion in a pan with oil. Add the leeks and let them cook down for 10 minutes. Deglaze with the wine, let it evaporate for 2 minutes. Pour in the cream and mustard and let it simmer for 4 minutes. Transfer to a bowl and add the crozets.
  • 4.   It warms you up. Prepare this gratin in advance. Refrigerate or freeze it. Reheat it for about 30 minutes at 180 °C/350 °F.
  • 5.   In a buttered dish, pour the leek crozets. Arrange the slices of ham. Grate the beaufort cheese on top and broil for 10 minutes. Serve hot.
