1. With the peeler, cut the zucchini into strips.
2. Heat some olive oil in a large pan, put the strips of raw zucchini and the cloves of garlic in a shirt.
3. Season with thyme, salt, pepper or Espelette pepper, and cook over medium heat until the courgettes are tender (if it sticks, add a little water during cooking).
4. It takes about 20 minutes, depending on the amount of zucchini and the size of the pan (mix regularly, otherwise it's raw on top and burnt on the bottom).
5. Meanwhile cook the pasta in salted water for the time indicated on the package. Heat the cream in a small saucepan, add the goat cheese palets and melt in it.
6. On each plate, serve the pasta, a thick layer of melted zucchini on top, top with goat cream and sprinkle with Parmesan.
