1. Using a peeler, cut the zucchini into strips.
2. Heat olive oil in a large skillet, add the raw zucchini strips and the unpeeled garlic cloves.
3. Season with thyme, salt, pepper or Espelette pepper, and cook over medium heat until the zucchini is tender (if it sticks, add a little water during cooking).
4. This takes about 20 minutes, depending on the quantity of zucchini and the size of the skillet (stir regularly, otherwise it will be raw on top and burnt on the bottom).
5. Meanwhile, cook the pasta in salted water for the time indicated on the package. Heat the cream in a small saucepan, add the goat cheese discs and melt them in.
6. In each plate, serve the pasta, a thick layer of tender zucchini on top, drizzle with goat cheese cream and sprinkle with Parmesan cheese.
