Instructions

  • 1.   Cut the avocados in half, remove the pit, and dice the flesh. Drizzle with 1 tablespoon of lemon juice, season with salt and pepper, and mix.
  • 2.   Dice the salmon fillets. Season with salt and pepper, drizzle with the remaining lemon juice and 1 tablespoon of olive oil.
  • 3.   Using pastry rings, arrange the avocado dice in each plate. Cover with salmon. Remove the rings, sprinkle with watercress sprouts, drizzle with the remaining oil, and serve chilled.
