1. Roll out the dough in a buttered and floured pie dish.
2. Clean and slice the white parts of 3 leeks.
3. Brown the bacon, using the fat to sauté the leeks afterwards.
4. Spread the bacon and leeks on the bottom of the pie crust.
5. Preheat the oven to 180°C (350°F).
6. In a bowl, beat the eggs, cream, and milk. Season to taste, then pour the mixture into the pie.
7. Cut the goat cheese into slices and place them on top of the quiche.
8. Bake in the oven for 25 to 30 minutes.
