Bacon, shallot, and mushroom omelette

Instructions

  • 1.   Peel and finely chop the shallot, slice the button mushrooms. Sauté the bacon, mushrooms, and shallot in a frying pan.
  • 2.   Crack 8 eggs into a bowl, season with salt and pepper. Add some Herbes de Provence. Beat vigorously. Pour the omelette into the frying pan and let it cook over medium heat without touching it.
  • 3.   As soon as the edges start to set, gently lift the edges with a fork. Tilt the pan so that the liquid flows towards the edges. Continue cooking over medium heat.
