Zucchini and Tzatziki Wraps

Instructions

  • 1.   Wash the zucchini. Cut it into thin strips using a peeler. Heat some oil in a pan and sauté the zucchini. When cooked, season and let it cool.
  • 2.   Prepare the tzatziki: peel 1/3 of the cucumber and dice it. Mix it with the soy yogurt. Chop the mint and add it. Finish with a little lemon juice and season.
  • 3.   Slice the remaining cucumber into thin slices.
  • 4.   Spread tzatziki on your wheat tortillas. Arrange cucumber slices and zucchini on top. Roll up your tortillas to form wraps! It's ready!

  • ½ lemons
  • 1 handful of olive oil
